INGREDIENTS













  • 1 cup quinoa










  • 2 cup water










  • 1 tsp salt










  • 1 tsp chicken consoumme










  • 1 medium onion










  • 1 green & red pepper










  • 3 stalks celery










  • 3 carrots










  • ΒΌ cup toasted slivered almonds (opt)










  • 1 crushed garlic (opt)










  1. Place 1 cup of quinoa in a pot with 2 cups of water. Bring to a boil. Lower flame to simmer, cover & cook 12-15 minutes until liquid is absorbed.



  2. Dice all vegetables very small & saute in 2-3 TB oil for 5-10 minutes until soft.



  3. Combine quinoa & vegetables. Serve warm as a side dish to fish or meat.
