
These popovers or muffins are a delicious treat. They can be served as a side dish to your meat or chicken, as a dessert sprinkled with confectionary sugar with a glass of tea or just as a great brunch dish with freshly brewed coffee. Easy, different and freezes great! The chestnuts give it that something unusual!

INGREDIENTS
3 cup whipping cream(topping)
6 eggs
½ cup cried cranberries-craisins
- salt & pepper to taste
1 lb day old challah-cut into small cubes with crusts removed
- pinch cinnamon or nutmeg
¼ cup roasted chestnuts chopped
1-2 Tbsp sugar or substitute
1-2 Tbsp chopped parsley
In bowl combine cream, eggs, salt, pepper, and cinnamon. Add dried cranberries and challah cubes and mix thoroughly.
Refrigerate for 15 minutes to let the challah bread absorb the mixture. Add roasted chestnuts, parsley and sugar. If you like it sweet add the full 2 tablespoons.
Spoon mixture into greased muffin or popover tins. Bake until set , 25-30 minutes.
As a dessert sprinkle on some confectionary sugar.
