This side dish can be made with broccoli or cauliflower. Its quick and tasty, and a good way to get your kids to try these vegetables.

INGREDIENTS













  • 2 lb Frozen Broccoli or Cauliflower (cooked and drained)










  • 4 Eggs










  • 1 (2 oz) Packet onion soup mix










  • 2 Tbsp Mayonaise










  • 4 Tbsp Cornflake crumbs










  1. Cook and drain the vegetable.



  2. Mix together all the ingredients in a food processor and put in 8' souffle dish.



  3. Sprinkle on top cornflake crumbs and bake 45 mins in medium oven.

I baked this in an oven to tableware dish so I was able to bring the souffle directly to the table. Went well with the meat slices. I used low-fat mayonnaise just to save some calories. Will definitely make this again. Maybe in mini pans next time.
