I was questioning my workmate what she's doing a different kugel for Yom Tov so she gave me this kugel...... If you haven't tasted this one, you haven't tasted a good kugel in your life yet..... I sent it to my sisters to taste & they all nicely called me up the next yom tov for the recipe..... It is quite easy to make & freezes very well:)
3 sticks margarine
2½ cup sugar
3 cup flour
3 Tbsp lemon juice
3 Tbsp vanilla sugar
3 small cans apricot
Beat for 10 minutes margarine & sugar. Add eggs 1 at a time. Add rest of the ingredients & mix well.
Spoon batter into pan and align rows of apricot evenly, slightly pushed in.
Bake on 350 for 45-50 minutes.
Could be baked in 1 cookie sheet or 3 middle square bekelach.
