An easy Mandel Bread recipe that can double as a cookie recipe.
1 (½ cup) vegetable oil
1 (¾ cup) sugar
1 (1 tsp) baking powder
1 (2 cup) flour
1 (1 tsp) vanilla extract
1 (1 cup) chocolate chips or candied fruit
Beat oil and sugar together.
Add eggs and vanilla and beat again.
Add baking powder and mix to combine.
Add sifted flour and mix well.
Add chocolate chips or candied fruit and mix well.
Pour out onto cookie sheet and shape into loaf. It should look like a giant cookie.
Bake at 375 degrees for 25-30 minutes.
