I found this recipe in the Binah Magazine (don't recall editors name) , its healthy and delicous
1 (2 lb) bag spinach,defrosted
1 (2 lb) spaguetti squash
3 egg whites
1 Tbsp consomme mix w/o MSG
½ tsp salt
- black pepper to taste
1 onion , diced
cut spaguetti squash in half lengthwise. Place both halves cut side down in a 9x13. Bake at 400 for 1 hour.
When cool, remove the squash strands from the peel with a fork, then set aside. Squeeze out all liquid from the defrosted spinach.
Saute onion in cooking spray until translucent. Remove from flame and add spinach to the pan. Mix spinach and onions together.
Place the spinach mixture in a large mixing bowl. Add the squash, egg, egg whites, consomme mix, salt, and pepper. Mix together thoroughly.
Pour into a 10'' round pan. Bake at 400 for 1 hour.
