This spread is delicious on bagels, but I use it as the fish course on Shavuous. It works equally well on challah or spread in celery or red pepper strips. For a lovely presentation, hollow out a bell pepper, round the upper edges, and pack the spread inside. Surround the pepper with crackers or crudites.
8 oz cream cheese, at room temperature
¼ cup cream or milk
1 scallion, thinly sliced
1 tsp lemon juice
⅛ tsp hot sauce
4 oz smoked salmon, gently shredded
Gently stir together the cream cheese and cream or milk. Carefully stir in scallion, lemon juice, and hot sauce.
Fold in the smoked salmon until combined, but be careful not to overmix. The shreds of salmon should remain intact.
