Great alternative to breaded fried chicken cutlets. Quick and easy with a terrific taste.
1 (12 oz) chicken breast cut to your preference
1-2 Tbsp flour
2 Tbsp lemon pepper seasoning
½ medium fresh lemon squeezed
1 cup chicken broth
1-2 Tbsp unsalted margarine
Mix flour with lemon pepper seasoning. Roll chicken pieces( strips, nuggets) in mixture.
Heat margarine in large skillet; add chicken and brown on both sides- about 3 minutes per side.
Remove zest from lemon and squeeze juice. Mix zest and juice with chicken broth.
Pour over chicken and continue to cook for 15 minutes with covered pot. Remove lid and cook for another 5 minutes until juice runs clear. Serve immediately.
