Al Di La is a restaurant in Monsey NY that makes a mean Caesar Salad. Since most restaurants make large quantities of food, the recipes are hard to scale down (hence the half egg). Although the ingredients are in oz, its completely worth to pull out your kitchen scale and try the recipe out. You can also serve this salad with out the parmesan cheese for a parve version.
1 oz anchovies
1 oz garlic
1 oz capers
1 oz mustard
Â½ raw egg, optional
1 cup oil
In a food processor or blender, blend the anchovies, garlic, capers very well until a paste forms.
Add the mustard and the egg. Blend.
Gradually add the oil in a thin stream.
optional: you can add some water to thin out the dressing.
Toss with lettuce, croutons and parmesan cheese.
