I tasted this by a party, and it was reminiscent to the yummy vegetables I eat by weddings.
4 Squash unpeeled, sliced not too thinly
2 red peppers
1 purple onion
1 large can mushrooms
½ cup olive oil
1 tsp salt
1 tsp oregeno
1 tsp basil
1 tsp pepper
Mix all dressing ingredients together, and pour over sliced vegetables.
Bake uncovered at 400 for 20 minutes, and then at 350 for 20 minutes.
