INGREDIENTS













  • 2 celery stalks diced










  • 1 onion chopped










  • 1 pepper diced










  • 2 scallions chopped










  • 1 (8 oz) small can mushrooms










  • 4-5 Tbsp soy sauce










  • - salt and pepper to taste










  • 1½ cup rice










  1. Saute all vegetables together till tender. Add soy sauce and set aside.



  2. Cook the rice, and add to vegetables.

I had fresh mushrooms on hand, so I used those instead. I threw the washed veggies into my food processor, then I sauteed them and threw in the cooked rice. I added 1/4 teaspoon Five-spice powder to the sauteeing veggies, and skipped the salt because I thought the soy sauce would be salty enough (used 4 tablespoons). Cappucino is right, though, it needs a little more salt. This makes a big pot--probably enough for 8-10 people, maybe more. It's quite yummy!
