INGREDIENTS













  • 2 medium butternut squash, cooked, drained and mashed










  • 4 eggs










  • ½ cup sugar










  • 1 tsp vanilla sugar










  • ½ cup flour










  • 3 oz margarine (¾ stick or ½ cup oil)










  1. Combine all ingredients and mix until smooth.



  2. Pour batter into cupcake holders.



  3. Bake at 350F for 45 minutes.
