Caramelized carrots are one of the Simanim (Symbolic food) to increase our merits in the year to come. It also makes for a great sweet side dish during the year.

INGREDIENTS













  • 8 carrots










  • 1 cup sugar










  • ½ cup oil










  • 1 lemon, juice of (about 3 Tbsp)










  • 1 pinch salt










  1. Peel the carrots and slice thinly.



  2. In a small pot, heat the oil. Add the carrots and sauté for 5 minutes.



  3. Add the sugar, lemon juice, and salt.



  4. Cook, covered, over low heat for 45-60 minutes. Uncover the last 5-10 minutes. Stir occasionally.

Came out perfect! The whole family enjoyed it. I made it a few days before Rosh Hashanna, and was afraid to freeze it. But it still tasted fresh and sweet!

Very good, but I think I used too much sugar. I used frozen carrots to save time, but wasn't sure if a 1 lb bag equaled 8 carrots. I'm assuming not because it was very sweet.
