This kugel is easy to make and tastes great. My mother-in-law makes this kugel as a vegetable side dish for a yom tov meal.

INGREDIENTS













  • 1 large sweet potato, grated on large










  • 1 (8 oz) can of mushrooms










  • 1 onion, finely chopped










  • 1 clove garlic, crushed










  • 1 tbsp mushroom soup mix (optional)










  • 4 eggs










  • 1 cup flour










  • ½ cup oil










  • salt (to taste










  • pepper (to taste










  1. Mix together all ingredients.



  2. Line a 5 X 7 pan with parchment paper. Sprinkle the pan with corn flake crumbs.



  3. Pour the mixture into the pan. Cover the mixture with corn flake crumbs.



  4. Bake on 350 for 1 hour (or more), uncovered.
