This kugel is easy to make and tastes great. My mother-in-law makes this kugel as a vegetable side dish for a yom tov meal.
1 large sweet potato, grated on large
1 (8 oz) can of mushrooms
1 onion, finely chopped
1 clove garlic, crushed
1 tbsp mushroom soup mix (optional)
1 cup flour
½ cup oil
salt (to taste
pepper (to taste
Mix together all ingredients.
Line a 5 X 7 pan with parchment paper. Sprinkle the pan with corn flake crumbs.
Pour the mixture into the pan. Cover the mixture with corn flake crumbs.
Bake on 350 for 1 hour (or more), uncovered.
