I had lots of vegetables in my fridge and decided to throw it together into a vegetable soup. The results were great so let me share it with you.
3 med-small Zucchini
Â¾ cup Peas (frozen or fresh)
1 tbsp (heaping) Chicken Soup Mix (pareve or meat)
1 tsp Salt
â…“ tsp Pepper
1 tsp Italian Seasoning (or Oregano)
Chop all the vegetables into nice spoon size pieces (not bigger that 3/4 inch).
SautÃ© the onion until translucent in oil, use a big pot because this is a lot of vegetables.
Add the rest of the vegetables and let it sit with oil, stirring occasionally. After about 10-15 minutes fill the pot with water and bring to a boil.
Add the salt, pepper, chicken soup mix (pareve or meat), and italian seasoning. Once the soup came to a boil, lower the flame and let it cook for an hour.
