I have no idea why its called Chunky Monkey Ice Cream, thats the name I received with the recipe. This is my daughters favorite ice cream and she requested I post it up. I usually add some chocolate fudge or I swirl in some chocolate syrup.
2 quarts ice cream
4 oz margarine
½ cup brown sugar
½ tsp coffee (dissolved in a bit of water)
1¼ cup flour
¼ tsp baking powder
1 cup chocolate chips
5 eggs, separated
1 Tbsp vanilla sugar
2 (8 oz) non dairy whip toppings
¾ cup sugar
Crunch: By hand, mix the margarine, brown sugar, coffee, flour and baking powder. Then add the chocolate chips.
Place on a lined cookie sheet. Bake in a preheated oven at 350F for 20 minutes. Let cool.
When cool, with a fork break into bite size pieces.
Ice Cream: Beat the egg whites with the vanilla sugar and 1/4 cup of the sugar. Set aside.
Beat the whips up. Add the yolks and remaining sugar.
Fold the whites into the whip.
Gently fold in the crunch. You can also add a chocolate fudge if you wish.
Freeze a minimum of 18 hours before serving.
