I make this salad for myself whenever I want a refreshing lunch or even dinner. It's filling, delicious, and takes just a couple minutes (checking basil leaves is the only thing that takes time...but you can use cubes if you mix well). It's a big bowl....and very little calories all together. You never know until you try it....

INGREDIENTS













  • 3 cup watermelon, cubed










  • 1 oz light feta cheese










  • 6 basil leaves










  • ½ cup balsamic vinegar










  • ¼ cup red wine vinegar










  • 1 Tbsp agave nectar










  • 0 Salt and pepper










  1. Combine the watermelon, feta, and basil in a bowl.



  2. In a saucepan over medium heat, combine the balsamic vinegar, red wine vinegar, and agave nectar. Bring to a simmer and cook until the liquid is reduced to about half the quantity, and is thick and syrupy. Pour over salad.



  3. Season with salt and pepper to taste.
