
I make this salad for myself whenever I want a refreshing lunch or even dinner. It's filling, delicious, and takes just a couple minutes (checking basil leaves is the only thing that takes time...but you can use cubes if you mix well). It's a big bowl....and very little calories all together. You never know until you try it....

INGREDIENTS
3 cup watermelon, cubed
1 oz light feta cheese
6 basil leaves
½ cup balsamic vinegar
¼ cup red wine vinegar
1 Tbsp agave nectar
0 Salt and pepper
Combine the watermelon, feta, and basil in a bowl.
In a saucepan over medium heat, combine the balsamic vinegar, red wine vinegar, and agave nectar. Bring to a simmer and cook until the liquid is reduced to about half the quantity, and is thick and syrupy. Pour over salad.
Season with salt and pepper to taste.
