
This can be made equally delicious with canned or fresh peaches.
Cut the peaches nicely and layout in a pretty pattern to make for a nice presentation
For the crust either buy a premade, unbaked pie crust, or you can make enough pie dough for 1/2 a pie. A good crust can be found at http://www.cookkosher.com/index.php?option=com_content&view=article&id=2761.

INGREDIENTS
1 pie crust
1 egg
¾ cup sugar
¾ stick margarine, melted
1 tsp vanilla
¼ tsp salt
- peaches (see directions for amounts)
Pre-bake the pie crust. Bake at 350 for 15 minutes covered with foil with a weight (either beans or another pot). Remove weight and foil. Poke holes and bake 5 more minutes or until it starts browning. Paint crust with a egg yolk. Return to oven for 1 minute.
For the peaches you need 4 - 5 fresh peaches, peeled and halved. Or use a can of peaches halves or peaches slices.
Arrange in a single layer, cut side down, over the bottom of the crust.
Whisk together eggs, sugar, margarine, vanilla, salt.
Pour the mixture over the peaches.
Bake for 10 minutes at 400. Reduce to 300 and bake for 1 hour or longer until set.
Let cool before serving.
