Scrumptious dairy muffins; light and moist. Easy to prepare and no mixer needed. Great with your morning cup of coffee or as a snack anytime of the day. This recipe will give you 12 regular muffins or 24 mini muffins.
2 cup all purpose flour
2 tsp baking powder
½ tsp salt
½ cup sugar
1 lb milk
½ cup butter (1 stick)
6 oz blueberries (1 ½ cups)
Heat oven to 400. Line or spray a muffin pan well. Set aside.
In a bowl with a fork mix together the flour, baking powder, salt, and sugar; make a well in center.
Melt butter in a pan over medium heat until butter begins to brown-3 minutes. Remove from heat.
Pour butter, milk, and egg in well of flour.Stir to combine. Some lumps in the batter are OK- do not overmix. Fold in blueberries Divide among the muffin cups. Sprinkle 2 tsp sugar over muffins. Bake for 16-20 minutes. Cool and enjoy!
