Very nice dish. This can last in the fridge for up to a week.
4-6 slices of salmon
1 cup vinegar
1 cup warm water
½ cup sugar or splenda
1 tsp salt
10 oz ketchup
¼ cup pickling spice
2 onions sliced
3 bay leaves
Boil the salmon slices for 15 minutes.
Drain the salmon and let it cool.
In a separate bowl, mix all the ingredients except the onions and bay leaves.
When salmon is cool, lift and place in a glass bowl.
Pour the dressing on top.
Place sliced onions and bay leaves into the bowl.
Let the salmon sit for 3 days before serving.
