Dessert. I cut cake in half cross-wise and add strawberries and non-dairy whipping cream in between layers and on top. Makes a festive dessert. Would work well with any berries.

INGREDIENTS













  • 9 eggs separated










  • 1½ cup sugar










  • 1 lemon juice and rind










  • 1½ tsp salt










  • ¼ cup potato starch










  • ½ cup cake meal










  1. beat egg whites and 1/2 cup sugar till peaks



  2. Beat yolks in large bowl with 1 cup sugar till thick and pale yellow. Add lemon.



  3. Sift potato starch, salt and cake meal three times. Add to egg yolk mixture 1/3 at a time.



  4. Fold in egg whites gently.



  5. Bake in ungreased tube pan for 1 hour at 350 F. Invert and cool.
