Good for Pesach and all year round! Just use flour instead of potato starch for a chometz version.
3 cup cubed, raw potatoes
2 Tbsp potato starch
1 small onion, quartered
1 tsp salt
¼ tsp baking powder
Put 1/2 cup potatoes, eggs, potato starch, onion, salt and baking powder into food processor using the S-blade.
Process. Add rest of potatoes and grind.
Fry as latkes in hot oil
