INGREDIENTS

6 large potatoes

3 large zucchini

1 xlarge carrot

1 onion

5 eggs

¾ cup oil

1 Tbsp salt

1 tsp pepper

¼ cup potato starch

grate all vegetables and drain well.

beat eggs with a fork

combine all ingredients

bake in a 9x13 on 350 for 1 1/2 hours.

I made this last week and it tastes more like a zucchini kugel than vegetable kugel. I even added more carrots and potatoes than called for but even so, it had a predominant squash taste. If you don't like that, I'd suggest using less squash and more carrots.
