This is a great shmear for matzo and equally good as a vegetable dip. It also tastes really good with fish. If you can manage, fresh lemon juice makes a huge difference. Whip up a batch of this, and you'll have options.
1 whole egg
2 egg yolks
½ cup fresh lemon juice
- salt & pepper to taste
6 large garlic cloves, chopped
2¼ cup good quality olive oil
Combine the eggs and half the lemon juice in a food processor fitted with the steel blade. Season with salt and pepper and process for 1 minute.
With the machine still running, add the garlic through the feed tube. Begin to add the olive oil in a slow stream. (Maybe your feed tube plunger has a hole in it, so you can add the oil by pouring it directly into the plunger.) After the oil is incorporated into the mixture, stop the machine.
Taste the mayonnaise and decide if you want to add more lemon juice. Add gradually, tasting as you go. Cover and refrigerate until ready to use.
