Not a meringue, this is a rich starch free nut cookie that's great for using up the extra yolks left over from preparing all those Pesach meringues.
4 egg yolks
1 cup sugar
2 cup ground nuts, any
Preheat oven to 350 and line cookie sheet with parchment.
Beat eggs with sugar till creamy. Add nuts and let set in fridge till firm and manageable.
Roll into balls and set on prepared baking sheet. Bake for 10 minutes. Cookies should be soft NOT crumbly, so watch carefully in oven.
