Refreshing appetzier to lighten the meal when there is just too much to eat- especially on hot days

INGREDIENTS













  • 3 cup blueberries










  • 4 cup water










  • 1 pinch salt










  • 1 Tbsp sugar










  • 1½ cup sour cream (can be parve)










  • 3 Tbsp potato starch










  • ⅛ tsp cinnamon










  1. Boil 2 cups of blueberries in the water



  2. Stir in the salt, cinnamon and sugar



  3. Remove from heat



  4. Whip potato starch into the sour cream,



  5. Then whip both into the hot liquid



  6. When well blended, return pot to the heat and bring to a boil



  7. Reduce heat and stir until thickened



  8. Remove from heat and stir in another 1/2 cup of blueberries and chilll in refrigerator



  9. When ready to serve stir in the remaining 1/2 cup blueberries
