If you don't use the pepper just leave them out.

INGREDIENTS
2 large green squash, washed
2 large yellow squash, washed
⅔ red onion
1 green pepper
1 red pepper
½ lb carrots, peeled
½ tsp salt
1 tsp dried basil
½ tsp ground black pepper
⅓ cup oil
Cut all vegetables into spears.
Cut onions into rounds
Bake 1 hour uncovered.
