Gorgeous colors and great flavors.
the squash is most beautiful unpeeled but if you peel veggies for pesach it will taste just as good.
If you don't use the pepper just leave them out.

INGREDIENTS













  • 2 large green squash, washed










  • 2 large yellow squash, washed










  • ⅔ red onion










  • 1 green pepper










  • 1 red pepper










  • ½ lb carrots, peeled










  • ½ tsp salt










  • 1 tsp dried basil










  • ½ tsp ground black pepper










  • ⅓ cup oil










  1. Cut all vegetables into spears.
    Cut onions into rounds




  2. Bake 1 hour uncovered.
