INGREDIENTS













  • ½ lb fresh mushrooms










  • 1 onion










  • 2 Tbsp chicken fat










  • 1 tsp salt










  • ¼ cup water










  • 2 eggs, separated










  • 6 Tbsp water










  • 6 Tbsp matzo meal










  • 1 pinch pepper










  • 1 Tbsp chopped parsley










  • 1 large grated potato










  1. Slice mushrooms thin and simmer with grated onion, fat, salt and 1/4 cup water.



  2. Beat egg whites until stiff. Fold in yolks and 6 TBSP water.



  3. Gradually fold in matzo meal, mushroom mixture, pepper, parsley and grated potato.



  4. Fill the cavity of 6-8 lb chicken to bake or bake in a pan at 325 degrees for about an hour
