INGREDIENTS













  • ½ cup matzo meal










  • ½ cup potato flour










  • 6 eggs, separated










  • 1 cup sugar










  • ⅓ cup honey










  • ¼ cup orange juice










  • 1 tsp lemon juice










  • 1 tsp orange rind










  • 1 tsp lemon rind










  • ¼ tsp salt










  1. Mix matzo meal and potato flour and set aside.



  2. Beat egg yolks and sugar until thick.



  3. Add honey, juices, rind and dry ingredients.



  4. Separately, beat egg whites until stiff. Add the salt and fold into yolk mixture.



  5. Bake in a tube pan 350 degrees for 50-60 minutes.

Not a honey cake!

This is nothing like any honey cake that I've ever had before. More like a plava (sponge cake). The inside is pale yellow, whereas I expect honey cake to be brown. It has the slightly tough, chewy texture common to passover cakes with too many eggs and no fat. To be fair, the chewy texture might be because I overcooked it a little — my kitchen timer reset itself and I lost track of exactly how long it had been in the oven. But it's not good enough to try again.
