The baking powder is optional, but if you use it it add a lot to the batter.
1 lb chicken cutlets, cut into cubes
1 cup potato starch
1 tsp salt
1 Tbsp paprika
½ cup water
2 tsp oil
1 tsp baking powder
Mix the batter ingredient together.
Pat chicken dry and dip into batter. Fry on both sides until golden and ready.
Serve with a dipping sauce.
