If you don't use whip on pesach then the ice creams have a lot to be desired. What I realized helps this is if the ice cream has a crunch. Thats what makes all the difference.
- ICE CREAM:
1 cup sugar
1 Tbsp vanilla sugar
½ cup oil
½ cup brittle
1½ cup sugar
1½ cup chopped nuts
Ice Cream: Beat the egg whites until stiff. Gradually add the sugars. Slowly add the yolks and oil. Fold in the brittle.
You can garnish the top of the ice cream with additional brittle.
Brittle: In a saucepan, melt the sugar. Add the nuts. Spread out on a piece of silver foil. Let cool. When cool, grind in food processor to desired size.
