This is my grandmothers recipe. Exactly how she's been making it for over 50 years, possibly longer ;). Use for egg rolls, potato blintzes or sliced up for the soup.
12 large eggs
12 Tbsp potato starch
1 cup cold water
- salt (about a tsp)
In a blender or with a hand blender, mix the eggs. Add the potato starch, water and salt.
Blend until smooth.
Heat a crepe pan or skillet with a little oil. Spread a thin layer of batter on pan. when done, flip over and cook on other side. Repeat as needed.
