This chicken tastes scrumptious and is a change from your ordinary chicken in the pot dinner. To make this a one pot meal, add some veggies (think onion, carrots, potatoes) to the pan before cooking. When you baste the chicken, stir the veggies. The honey-garlic combo gives the veggies a delightful flavor!

INGREDIENTS













  • 4 chicken bottoms










  • 3 Tbsp olive oil










  • - salt & pepper










  • 2 cloves garlic, crushed










  • 2 Tbsp honey










  1. Smear chicken with 1 T oil and sprinkle salt and pepper. Place chicken in pan.



  2. Mix remaining ingredients and pour over chicken.



  3. Roast chicken uncovered on 350 F for 45 - 55 minutes. Baste chicken with juices halfway through.



  4. When done, cover chicken tightly and let it sit for 10 minutes before serving.
