This cucumber salad is my mother - in - laws specialty! She peels loads of cucumbers for this salad and it gets eaten in flash! When making it all year round, feel free to substitute the lemon juice for vinegar. Also, there are no amounts for the grated carrot and red pepper - my mother-in-law puts it into the salad to add color. ( Note - remember to peel the pepper!)

INGREDIENTS













  • 10 cucumbers, thinly sliced










  • 1 red onion, sliced into rings










  • - grated carrot










  • - red pepper, cut thinly










  • - DRESSING:










  • ⅓ cup sugar










  • 1½ tsp salt










  • 3 Tbsp water










  • ⅓ cup lemon juice










  • 2 Tbsp oil










  1. Combine all dressing ingredients. Pour over vegetables.



  2. It's best if this salad marinates for about 2 hours before serving, unless you like your cucumbers very crunchy.
