INGREDIENTS
10 eggs
2½ oz paper cups of sugar
¾ cup orange juice
¾ cup oil
3 cup flour
2 tsp baking powder
½ tsp baking soda
½ tsp cinnamon
½ tsp all spice
½ lb honey
Preheat oven to 320F. Beat eggs whites until peaks form. ADD ALL SUGAR, MIX WELL. LOWER SPEED & ADD YOLKS, OIL, FLOUR & POWDER. SET ASIDE HALF THE BATTER.
TO THE REMAINING BATTER ADD: BAKING SODA, CINN, SPICE & HONEY. MIX GENTLY & WELL COMBINED. POUR HINEY BATTER INTO 10" TUB PAN. GENTLY TOP WITH SPONGE BATTER.
BAKE 1 1/4 HR, TEST WITH TOOTHPICK TO COME OUT CLEAN. COOL UPSIDE DOWN. MANY TIMES, YOU MAY HAVE A THREE TONE EFFECT IF SOME HONEY BATTER SETTLES TO THE BOTTOM. FREEZES BEAUTIFLLY!
