Delicious and easy kugel, this is a fantastic alternative to potato kugel. If you are looking for a low carb kugel for shabbos.
1 (32 oz) package frozen cauliflower
1 tsp salt
1 pinch pepper
4 eggs (lightly beaten)
Â˝ cup mayonnaise
3 Tbsp onion soup mix
2 Tbsp oil
Cook cauliflower until soft. Drain liquid. In a bowl, semi mash the cauliflower pieces.
Add the spices, mayonnaise and eggs. Combine well.
Prepare a 12x12 inch baking pan and grease pan with 2 Tablespons oil. Bake at 350F for 1 hour or until tops is well baked.
