A neighbor gave me this recipe a couple of years ago. Fantastic, delicious, and really VERY EASY to make- but looks professional. Presents itself beautifully at a simcha and amazingly it freezes great. When you want to impress, bake this is a square springform pan.
1 whole cheese cake
1 (10 oz) Bag Ostreicher chocolate chip cookies
5 oz Butter-melted
2 (8 oz) Whipped Cream Cheese
Â¾ cup Sugar
1 Tbsp Vanilla Sugar
- Dulce De Leche-caramel sauce
- Chocolate- Nuts
Place cookies in a ziplock bag. Break them into a fine crumb-either with a rolling pin, by hand or you can blend them with a hand or regular blender. Mix together with melted butter and press this on bottom of a springform pan.
Mix well by hand the cream cheese, eggs and sugars. Pour into pan. Place pan in a water bath. Just place the springform pan in a larger baking pan. Fill the larger pan with water half way up, so that the cheese cake pan is surrounded with water. This keeps the cake very moist.
Bake for 50-60 minutes at 350. Remove carefully from oven-take out of water pan. Cool.
Smear caramel sauce on cooled cheese cake, I like the dulce de leche dairy. Shave chocolate curls on top. You can use a two tone or just a white chocolate. Make sure to use a good quality chocolate. Feel free to decorate any way you like-nuts etc...
