My version of the famous Neiman Marcus Cookie. My twist- no blending the oatmeal, no nuts and replace the chocoate chips with bars of good quality chocolate chopped.
40 or 100 cookies
4 (4 oz) sticks margarine
2 cup sugar
2 cup brown sugar
2 tsp vanilla sugar
4 cup flour
1 tsp salt
2 tsp baking soda
2 (3½ oz) bars of good quality chocolate (like Rosemarie), chopped)
4 oz bittersweet chocolate, grated
5 cup oats
Cream the margarine and sugar. Add the eggs, vanilla sugar and all dry ingredients.
For jumbo cookies, using an ice cream scooper, form balls, placing 6 on a lined cookie sheet. Or form smaller balls. (It will yield either appox. 40 jumbo or 100 small cookies.)
Bake at 375 for 10 minutes for small cookies and about 18 minutes for larger ones. Check as everyones balls and scoops are different sizes. (some sizes need 20 minutes.)
