I think even if you don't like zucchini, or are not on a diet, you will love this quick, easy, tasty soup!
Multiply to make as many portions as desired. Takes minutes, but tastes like it was cooking for hours!

INGREDIENTS













  • 1 medium onion, cut any way










  • 2 tsp olive oil










  • 1 medium zucchini, peeled and sliced










  • ½ yellow or green bell pepper, cut any way










  • ¾ cup water










  • 1 pkt. onion "Ten" soup










  • 1 pinch black or white pepper, to taste










  1. Add to olive oil in pot on medium burner, in this order: onion, pepper, zucchini.



  2. Saute vegies until they are soft or al dente, as you prefer, stirring every few minutes.



  3. Add water, soup mix, and pepper.



  4. Blend, using a hand blender, till smooth, or leave some pieces of vegetables if you prefer it that way.
