I think even if you don't like zucchini, or are not on a diet, you will love this quick, easy, tasty soup!
Multiply to make as many portions as desired. Takes minutes, but tastes like it was cooking for hours!
1 medium onion, cut any way
2 tsp olive oil
1 medium zucchini, peeled and sliced
½ yellow or green bell pepper, cut any way
¾ cup water
1 pkt. onion "Ten" soup
1 pinch black or white pepper, to taste
Add to olive oil in pot on medium burner, in this order: onion, pepper, zucchini.
Saute vegies until they are soft or al dente, as you prefer, stirring every few minutes.
Add water, soup mix, and pepper.
Blend, using a hand blender, till smooth, or leave some pieces of vegetables if you prefer it that way.
