
All I have to say is yum. Great snack baked rather then fried, much healthier alternative to regular fried fries. You can use sweet potatoes, white potatoes, carrots and experiment with other vegetables of your choice.

INGREDIENTS
3 carrots
1 large sweet potato
1 Tbsp olive oil
1 tsp sugar (optional)
2 tsp finely chopped rosemary or other fresh herb (optional ,)
1 tsp or more salt and pepper to taste.
Peel carrots, cut off tips and ends. First cut them in half crossways, then in half lengthways. then cut them in half lengthways again-each carrot makes eight sticks.
Peel the sweet ptatoe and cut into sticks about the same size as the carrot ones.
In a bowl, combine the carrots and sweet potatoe sticks, olive oil, herbs, salt and pepper, sugar. Mix together.
Line a baking tray with wax paper and spoon the sticks onto it, spreading them out. Bake in hot preheated oven almost 400F degrees for 25-30 minutes until tender and browned. If using white potatoes they bake a little bit longer. You can turn them every few minutes for even browning.
