For extra show serve this soup inside bread bowls.
75 gram butter
3 Tbsp flour
6 onions - sliced into rings
1-2 cloves of garlic
1 cup white wine
2 stalks of celery
Brown flour in a small frying pan or skillet. Remove the pan from the fire when it just starts getting darker. You don't want the flour to burn.
Place butter in a pot and add the onion rings.
Chop garlic and add to onions.
Fry onions until they are a rich brown, add the flour.
Add the wine and and cook for 2 minutes.
Add water and celery. Season.
Bring to a boil and simmer for 30-45 minutes.
Serve with croutons and a sharp cheese such as parmesan
