A yummy version of a classic food. One of my favorite side dishes!
5 Kirby cucumbers (6, if very small)
½ purple onion
3 Israeli pickles
4 radishes (optional)
4 Tbsp mayonnaise
¼ cup (scant vinegar)
3 Tbsp sugar
3 Tbsp fresh dill, OR 1 Tbsp dried dill
1 tsp salt
Slice all the vegetables into thin rings (don't peel the cucumbers.)
Combine dressing ingredients and mix with veggies.
This stays fresh for 2 days.
