Delicious side dish for a real chinese tasting dinner!
1 cup Rice
2 Tbsp oil
2 cup water
½ tsp salt
2 Tbsp soy sauce
2 scallions (chopped)
Heat oil in pan. Sauté rice until golden. Add water n salt and bring to a boil. Add soy sauce.
Reduce flame, cover pan and let simmer until water has almost evaporated.
In a separate pan, make an omelette from 2 eggs. Cut in thin strips adding chopped scallions. Mix with rice.
