INGREDIENTS

  • 1½ lb beef tenderloin

  • 0 olive oil

  • 0 arugula leaves

  • 1 lemon

  • - fresh pepper and salt, to taste

  1. Place the fresh (it must be fresh) meat in the freezer for about 2 hours befor you serve it.

  2. Chill your serving plate (to keep the meat fresh for saftey reasons).

  3. Lay out some cling film.

  4. Cut the meat across the grain with a sharp knife, as thin as you can.

  5. Lay out a few slices and cover with another layer of film- bang away!

  6. Cover the chilled plate with a few slices and add the arugula leaves.

  7. Drizzle some olive oil plus some lemon juice, a nice amount (half a lemon) spinkle salt and thick fresh pepper

  8. Serve at once!

  9. Optional: you can sear the meat before you slice it for a few seconds if your not ready for the real thing.<br />Note: Tenderloin is expensive, you can use Sirloin till you the hang of it. All other cuts don't work well.
