INGREDIENTS
1½ lb beef tenderloin
0 olive oil
0 arugula leaves
1 lemon
- fresh pepper and salt, to taste
Place the fresh (it must be fresh) meat in the freezer for about 2 hours befor you serve it.
Chill your serving plate (to keep the meat fresh for saftey reasons).
Lay out some cling film.
Cut the meat across the grain with a sharp knife, as thin as you can.
Lay out a few slices and cover with another layer of film- bang away!
Cover the chilled plate with a few slices and add the arugula leaves.
Drizzle some olive oil plus some lemon juice, a nice amount (half a lemon) spinkle salt and thick fresh pepper
Serve at once!
Optional: you can sear the meat before you slice it for a few seconds if your not ready for the real thing.<br />Note: Tenderloin is expensive, you can use Sirloin till you the hang of it. All other cuts don't work well.
