I had never thought that I liked mushrooms, but a neighbor served a vegetable dish one night for shabbos dinner and I fell in love with them (the mushrooms, not the neighbors). Best part, it is super easy.
Cut up zucchini into slices (not too thin since it shrinks), cut up bigger than bite size chunks of red peppers, and add small white mushrooms, whole.
Drizzle some olive oil and then sprinkle some onion soup mix. Coat the veggies. Bake at 400 or maybe higher for 1/2-1 hr. depending on how soft you want the veggies. I think the combination of olive oil and the onion soup mix (do they make without msg, I hope) is yummy. |
