I am looking for some recipes for healthy muffins or cookies that my kids can take with them in the morning for breakfast. We live in Israel and they eat a sandwich at 9:30- so they just need something to tide them over until their 'aruchat eser'. I want something with whole wheat - but without hard to get ingredients.

i got a recipe and will make them tomorow i will let you know how they are andif they are good i will post to recipe. it is healthy muffins they say.

ok here it goes.
1.5 cups whole wheat flour
1 cup oats
1 egg
3/4 cups brown sugar or regular sugar
1 cup apple or orange juice
2 Tbsp. oil
2 tsp. baking powder
1 tsp. vanilla sugar (optional)
1/2 cup chocolate chips (optional).

spoon and bake as regular muffins 350 till done. enjoy.
let us know if you like it.

This is my mother's recipe, and they are the best muffins EVER!

Morning Glory Muffins
Dry
2 C. Whole Wheat Flour
1 C. Raw Granulated Sugar
2 tsp. Baking Powder
2 tsp. Cinnamon
1/2 tsp. Baking Soda
1/4 tsp. Sea Salt
Extras
2 C. Carrots, finely shredded
1 C. Apples, finely chopped
1/2 C. Raisins
1/2 C. Nuts, chopped
1/2 C. Shredded Coconut, (optional)
Wet
3 Eggs
3/4 C. Oil
2 tsp. Vanilla Extract
Milk (optional)

Preheat oven to 350 degrees Fahrenheit.
Mix all the dry ingredients together, and then add the extras. Whisk together the wet ingredients and add to the dry mixture. If batter is too dry, add milk 1 Tbl. at a time until wet enough.
Pour into greased or paper-lined muffin tins and bake for 30 minutes or until a toothpick inserted into one comes out clean. Cool and enjoy!

I often go to eatingwell.com when I am trawling for healthy recipes. I saw this recipe for Polenta Biscotti this morning http://www.eatingwell.com/recipes/polenta_biscotti.html and thought it looked interesting. It would be good with a piece of fruit, but might be more of an "adult" recipe (depending on your kids).

I am not sure how to link a recipe, but I tried "Miriam's Muffins", and they are really delicious. Great for a quick healthy snack, or on-the-go breakfast.
I made them in mini muffin tins and my kids loved them too!
