	Diet Joined: 12/19/2010 15:33 Posts: 45 What's the secret to good Chinese cooking? I heard from someone that Chinese restaurants coat chicken/meat in cornstarch and then double fry it. Then goes the sauce. It's supposed to make the chicken softer. Does that even make sense?
