The kids are going to camp and the family is smaller. Any ideas for suppers that are light,quick, and still nutritious for the kids at home. I need a vacation from all the yearly cooking, but do not want to serve pizza!

You can buy ready prepared hamburgers, and just stick them in the oven. Cut up vegetables (grilled or not) and serve them in pita bread with chummous and ketchup or oven fries. Another quick idea is to mix ketchup and mayo, little bit mustard too and to spread it over flat chicken cutlets. Sprinkle cornflake crumbs on top and bake for 20 mins.
