Should I boil potatoes in hot water or start them off in cold water?
Toss whole or cubed potatoes into a pot of boiling water, and you’ll end up with potatoes that are over and undercooked. Why? Since potatoes are dense, it takes a while for the internal temperatures to match the outside. By starting potatoes in cold water, the internal temperature will have a better chance of matching the outside as the water approaches and then reaches the boiling point. No more gummy mushy potatoes.
